iPhone Restore using Specific Software Version

If you have a specific firmware/software version for the iPhone saved away, you can restore using that version in iTunes by holding the SHIFT button while clicking the restore button (make sure you have a recent backup first!).  If you don’t use the SHIFT button iTunes will restore with the latest software available from Apple.
